We make three different varieties:
Dark - rich, thick, heavy with a sharp sweetness - Old Fashioned
Medium - slightly thinner, a little sweeter
Light - smooth, thin, sweet
All of our cane is cooked in a kettle, from our pesticide & chemical free fields.
Our cane is hand stripped, cut, stacked. We then put it through a grinder for the cane juice, then pour the juice into a 60g cast iron cook kettle where we methodically skim, boil, simmer, then collect the cane syrup, before hand bottling each individual bottle.
It's hard work, but we love it.
