The Crèvecœur breed is, without doubt, the most famous Norman breed of chicken in the story. It had its heyday at the end of the 19th century. For example, at the World Fair in Paris in 1855, there were two prizes awarded to poultry exhibited: one was reserved for Crèvecoeur, the other for all other breeds of poultry gathered.

Of a relatively easy breeding, the poultry of Crévecoeur are not tolerant of moisture; if you are in a rainy environment they may need to have access to a clean dry area that they can spend time in. However, Crèvecoeur do not fear the cold. They make good laying hens and will occasionally go broody. Finally, it should be noted that due to the presence of a strong crest, these poultry are easily startled due to the reduction of their visual field. It is therefore better to always make noise upon arrival into the coop or when coming upon the birds in order not to to not stress the birds too much.
Breed Development:
Originally, it was famous for its meat and egg production. Its strong size, precocity and the very high quality of its meat were regularly cited as examples of greatness. Just like many other breeds, they would be split at the end of the Nineteenth century into two types of Crèvecoeur: one adapted to the farm life, the attributes (beard, crested, favorites) less developed to avoid moisture concentration at head level. The other, of the competition type, where the aesthetic qualities detriment of hardiness.

Officially, the Crèvecoeur breed standard was established on July 11, 1909 by the Poultry Company of Lower Normandy. It offers several original features: its crest is split in the shape of a V or even U, strength of crest,  a beard and developed favorites which while showing concern for vision.
In addition, the black variety must be considered as an original variety, even though there are now three varieties other colors: white, cuckoo and blue.
